AOP Rosette one of our series on french appellations.
AOP Rosette is a sweet wine from the area around Bergerac in South West France. It is a small appellation covering only a small area of some10 hectares and made by only a winemaker in the Bergerac, Creysse, Ginestet, Lembras, Mautend and Prigonrieux towns.
The grape varieties allowed are Sauvignon, Muscadelle and Sémillon.
The grapes are picked at maturity and fermented after a short maceration in tanks or barrels. The residual sugar in the finished wine I between 25 and 51 grams per litre.
The finished wine has aromas of citrus and exotic fruits and floral acacia and honeysuckle.
It can be taken as an aperitif, with poultry and fish, a blue cheese and foie gras.
