The firm’s motor has gone in for a brush up and polish. Well actually its an MOT and service. Her’s truly and moi sat in reception twiddling our fingers whilst she was given a clean bill of health. A four and a half hour stint which included some new shoes on the front and a new eye to let me know where we are going in the dark. Now we are off again for another year. She’s a great motor and does us proud and she was born in France.

Tata steel: Port Talbot faces bulk of 1,050 job losses

More than 1,000 jobs are to go at Tata Steel plants, mostly in south Wales.

So why can’t the UK government help the people of Port Talbot? Because we are members of the EU and the UK has no control any more over its own industry. We have to ask the EU for permission to help and it can take up to 12 months to get that permission. What absolute stupidity. We need to save these jobs and help the local community now. Make your voices heard people and vote to leave the EU so we can get back control for our own people and our communities.

Here’s our week for drinking wine based on the biodynamic calendar. Go on you should try it. Wine can taste better on the right days and here is our guide to follow. We’ve given you some ideas on the wine to drink on the good days ie fruit and flower. Enjoy.

An evening out with friends and our snifter with coffee was a decent glass of eau de vie.

Marc d’Alsace is the appellation covering eaux-de-vie from the Alsace wine region of north-eastern France – specifically those produced from grape marc (pomace). This clear spirit must be made from the marc of grapes grown within the Alsace region, as defined in the Alsace appellation laws. The defined area covers about 120 communes, from Thann in the south to Marlenheim, 60 miles (96km) away to the north.

AOC status has been granted only to thoseeaux-de-vie produced from Gewurztraminermarc. The title is one of 30 appellations for French Eaux-de-Vie; other examples include Marc de Bourgogne and Marc de Champagne. Alsace eau-de-vie that is not produced from Gewurztraminer is covered only by its EDVR (Eau-de-Vie Reglementee) status, first introduced in 1966.

Marc is grape pomace – the residual skins and seeds left behind after pressing. Marc d’Alsace must be distilled purely from this dry residue, without any grape juice (Italiangrappa is made in a very similar way). Because only dry skins and pips are used, the resulting spirit has less of a fruity character than an eau-de-vie distilled from wine, and is reliant more on mouthfeel than flavor to show its qualities. That said, Gewurztraminer retains more flavor in its marc than most other grapes – which is precisely why the Marc d’Alsace AOC covers only those eaux-de-vie produced from this aromatic variety

keeping up the temperature for the sparkling loire wines

Here in the Loire valley some winemakers are using old methods for making sparkling wines. There are the two standard appellations in the Saumur area of Saumur Mousseux,  and Cremant de Loire that may be made all along the Loire. These wines are usually made using the methode traditionelle whereby the second fermentation uses sugar and yeast added to the wine in the bottle to get the fizz. With this method the grapes are picked at a lower potential alcohol level typically around 10-11% and are not fully ripe and have less flavour as the second fermentation adds a further 1.5% alcohol. The old natural method is called methode ancestrale. The difference is that the first fermentation is stopped by cooling the wine still with some residual natural sugar and yeast. The wine is then put into bottles and with a rise in temperature the fermentation starts again. So the pic is of a heater under a plastic sheet surrounded by crates of wine to bring it up to a temperature so the bubbles can be produced. Apart from being a totally natural method the wines have more flavour as the grapes can be picked at 12-13% ie at full maturity.

Bottling in the Loire valley

A worker loading bottles onto a mobile bottling plant for the Loire white wine ,made by Domaine de L’Enchantoir in Puy Notre Dame near Saumur. A contraption is able to pick up 14 bottles at a time from the pallet of empty bottles and place them on the conveyor that takes the bottles into the filling machine. The machine washes out the bottles, fills them with wine and corks them before another member of the team removes them and puts them into a pallet holding 600 bottles each.The team bottled 12000 bottles of Saumur Chenin blanc and rosé in 6 hours (not including the lunch break!)

It is this time of year that the 2015 white and rosé wines are being bottled in the Loire valley now. So to Domaine de L’Enchantoir yesterday morning to assist them with the bottling of the Saumur chenin blanc and the cabernet d’anjou rosé. 12000 bottles in all. I had a tasting of the white. Traditionally the chenin blanc whites in the Loire do not go through malolactic fermentation so as to maintain a fresh crisp style for pairing with fish and seafood. The 2014 whites from Enchantoir maintained this classic style. The 2015 has less freshness I suppose as this summer we had loads of hot weather and the formation of the juice in the berries gave for a fatter wine. It needs time to settle and I will be tasting after a few weeks.

Galette des Rois is traditionally the opportunity to “draw the kings” to the Epiphany: a bean is hidden in the cake and the person who gets this bean becomes king (or queen) of the day and has the right wearing a fancy crown and chooses his queen (or king). In the second half of the 20th  century, bakers started to provide the cake with a golden paper crown to wear. The pic shows Pierre drawing the bean in the galette and choosing Brigitte, of course, as his queen (otherwise that would have been it).

A real mix of a week for the biodynamic calendar with flower, leaf,fruit and roof days all mixed up. Lets concentrate on the best days for drinking a good bottle of wine ie flower and fruit days. So on Monday we have flower and on Friday we have fruit. The rest are leaf and root days. Lets start with Monday and find you a good bottle of wine to savour. Why not start the week with a red wine that will pair with white meats like pork. Chateau Perron la Gourdine is from Bordeaux made from a mix of Merlot and Cabernet Sauvignon grapes to produce a slightly spicy medium bodied wine. On Friday its a fruit day and traditionally a fish day. My favourite wine for fish is Muscadet sur lie. Try the Domaine de la Haute-Vrignais Muscadet really supple with a nutty creamy mouth.

The Loire river moves and changes each day. Each day you see it the light is different, the swirls and ebbs move the water is all directions and the scape remains fluid. There has been a long period without rain really throughout 2015 and the river has gradually reduced to reveal channels amongst the sand banks. Now with a sudden change in the weather pattern we have had rain and the river has risen to reveal its full width after many a month and it now looks a little bit more like normal.
