Its best you save the good bottle of wine until Tuesday as Monday is a leaf day. Tuesday and Wednesday are both fruit days so a chance to open that bottle of wine. I would try a nice crisp chenin blanc from the Loire valley.How about a Saumur AOP from Enchantoir. Its won loads of accolades and is the ambassador for the Loire valley when it comes to presenting wine to foreign guests. Stay clear of Thursday, Friday and Saturday as they are all root days. The saving grace is that Sunday ends the week on a good note with a flower day. How about a glass of Burgundy with your sunday roast. Its a pleasure with roast lamb. Try our Hautes Cotes de Beaune AOP from Manior de Mercey. Its subtle with nice soft tannins and a mouth of compoted fruits.

Pigeage

Pigeage is a French winemaking term for the traditional stomping of grapes in open fermentation tanks. To make certain types of wine, grapes are put through a crusher and then poured into open fermentation tanks. Once fermentation begins, the grape skins are pushed to the surface by carbon dioxide gases released in the fermentation process. This layer of skins and other solids is known as the cap. As the skins are the source of the tannins, the cap needs to be mixed through the liquid each day, or “punched,” which traditionally is done by stomping through the vat.

4 measures vodka

2 measures lemon juice

ice cubes

ginger beer

sprigs of mint

Pour vodka and lemon juice over ice cubes into two glasses. Fill with ginger beer and stir to mix. Garnish each glass with a sprig of mint.

 From my tasting of the Grand Cercle les vins de Bordeaux en primeur last week, I tasted over fifty wines and here is one of my favourites. This is from the left bank in Medoc. Chateau Rollan de By. This is a renowned wine of the Medoc with a blend of 70% Merlot, 10% Cabernet Sauvignon, 10% Cabernet Franc and 10% Petit Verdot with adeep colour and a certain opulence. Loads of fruit and nicely balanced. It could be a good vintage?

A great start to the week on Monday and Tuesday for a good bottle of wine so I’d plump for a special bottle of wine that won appellation status only in 2007 as the first vintage. We still have some 2009 and 2010 vintage. Both these are good years in the Loire valley. Its a village appellation Saumur Puy Notre Dame from winemaker Pierre can den Boom at Domaine de l’Enchantoir. Otherwise Wednesday until 4pm and Friday are both good times for a decent bottle. Forget Saturday after 11am and Sunday is totally gone as its a leaf day.

En primeur or “wine futures“, is a method of purchasing wines early while a vintage is still in a barrel, offering the customer the opportunity to invest in a particular wine before it is bottled. Payment is made at an early stage, a year or 18 months prior to the official release of a vintage. A possible advantage of buying wines en primeur is that the wines may be considerably cheaper during the en primeur period than they will be once bottled and released on the market. However, that is not guaranteed and some wines may lose value over time. Wine experts recommend buying en primeur for wines with very limited quantities and will most likely not be available when they are released. The wines most commonly offered en primeur are from BordeauxBurgundythe Rhône Valley andPort, although other regions are adopting the practice.

In following spring after a year’s harvest, merchants and trade organization will taste barrel samples of wine that is often only 6–8 months old. In the case of Bordeaux, where the final wine is often a blend of several grape varieties, the winemaker will try to craft an approximate blend to sample. The composition of the final wine may differ from the sample depending on how each barrel matures during the aging process. Based on the initial sample, the wines will be giving a preliminary “score” or wine rating based on the expected quality of the wine once it is bottled, released and has had time to mature.

An en primeur wine gives the owner the right to receive the respective bottles of wines once the producer has completed the maturing phase of the wine. Wine bought en primeur is often directly placed into custom-free storage holding, ‘in bond’. Known as a delicate method of investment, a purchase may ultimately be deemed a loss, or there may be considerable profit. For example, the 1982 vintage of Château Latour, was sold at £250 a case en primeur in 1983, while valued in 2007 at £9,000, although the major part of this price increase occurred after bottling

Do you enjoy your glass of wine when  you go to the pub or restaurant? I don’t and I dispair that the wine we are served is so absolutely rubbish and horrible. Let’s take for example an experience yesterday at a pub in Wiltshire (I won’t mention the exact place). The wine was a red merlot and it tasted of soap. Disgusting. Then a meal somewhere else with another horrible glass of wine. These house wines should be poured down the drain and the manufacturers, importers and outlets should be told what rubbish they sell to customers. Please do not go to these places and only go where proper wine is available. I always taste before I buy and so should you.
