The smaller the bubbles the better the wine. Large bubbles are the mark of lesser sparklers and are dismissed by the French as ‘oeils de crapaud’ or toad’s eyes.  According to scientist  Bill Lembeck the average bottle of bubbly contains around 49 million bubbles. If you want more bubbles scratch the bottom of your glass.
